Dosakaya Pappu is a nourishing Indian lentil dish cooked with aromatic spices and a flavorful tempering. This high protein vegetarian staple is DASH-friendly, budget-conscious, and perfect for healthy family meals.
Wash the toor dal thoroughly until the water runs clear and soak for at least 15 minutes for faster cooking.
In a pot, combine soaked dal, dosakaya pieces, onion, tomato, green chili, turmeric, and 3 cups of water. Bring to a boil over medium-high heat, skimming off any foam.
Reduce the heat to low, cover, and simmer for 30–35 minutes until the dal is very soft and dosakaya pieces are tender. Stir halfway to prevent sticking.
Add salt and mash some of the dal with the back of a spoon for a creamy texture. Let it simmer for another 3–4 minutes uncovered to adjust consistency.
For tempering, heat vegetable oil in a small skillet over medium heat. Add mustard seeds, allow to splutter, then add cumin seeds, dried red chili, and curry leaves. Sauté for 30 seconds until aromatic. Immediately pour the tempering into the dal and stir well.
Turn off the heat, garnish with fresh cilantro, and serve hot with rice or roti.
