Blanch the pork belly slab in boiling water for 5 minutes, then rinse and pat dry for a clean, tender result.
Cut the belly into large 2-inch cubes, making sure the skin remains attached to each piece.
Line a heavy pot with green onions and ginger slices, then arrange pork belly cubes skin-side down on top.
Mix Shaoxing wine, both soy sauces, water, and rock sugar until sugar dissolves; pour evenly over the pork.
Bring to a gentle simmer over medium heat, then reduce to low and cover. Braise for 2.5 to 3 hours, occasionally spooning sauce over the pork to ensure even color and tenderness.
After the pork is meltingly soft, uncover and increase heat. Simmer 20 minutes to reduce the sauce until glossy and thick, basting pork constantly to finish.
