Preheat your oven to 400°F and grease a large baking dish with 1 tablespoon olive oil.
Bring a large pot of salted water to a boil. Add potato gnocchi and cook until they float to the surface (about 2 minutes). Drain immediately to avoid overcooking.
Heat the remaining olive oil in a saucepan over medium heat. Add tomato sauce, salt, and black pepper, simmering for 8 minutes to reduce and concentrate flavor.
Layer cooked gnocchi in the baking dish, then spoon over the hot tomato sauce. Top with torn fresh mozzarella and sprinkle Parmesan cheese evenly.
