Heat the vegetable oil in a heavy-bottomed pot over medium heat. Add cumin seeds and let them sizzle for 30 seconds until aromatic.
Stir in the chopped onions and sauté on medium heat for 4–5 minutes, until soft and lightly golden.
Add the chopped tomatoes and green chili. Cook on medium-low heat for 3–4 minutes, stirring occasionally, until the tomatoes break down.
Mix in the turmeric powder, ground coriander, red chili powder, and a pinch of salt. Stir well to combine the spices and let cook for 1 minute to release flavors.
Add the soaked and drained vaal beans and diced potato. Stir to coat with the masala, then pour in 2 cups of water. Bring to a boil, cover, and simmer on low heat for 35–40 minutes until the beans are tender and the potatoes are cooked through.
Uncover, add the garam masala, and stir well. Adjust salt to taste. Simmer uncovered for an additional 2–3 minutes to thicken the curry to your desired consistency.
Turn off the heat, garnish with fresh chopped cilantro, and serve hot with rice or roti.
