Heat olive oil in a large, heavy pan over medium heat. Add finely diced onion and sauté for 2–3 minutes until translucent, taking care not to brown.
Stir in minced garlic and Arborio rice. Toast the rice for 1–2 minutes, stirring constantly, until edges look slightly translucent for better texture.
Add dry white wine and allow it to simmer, stirring, until almost fully absorbed. Mix in tomato paste and cherry tomatoes.
Start adding warm seafood stock, 1 ladle at a time, stirring frequently and only adding more when the liquid is nearly absorbed. Adjust heat to maintain a gentle simmer.
After about 12 minutes, fold in the mixed seafood. Continue to add stock and stir gently for another 6–8 minutes, just until the seafood is opaque and rice is al dente.
Season with salt, black pepper, and red pepper flakes. Remove from heat and stir in fresh parsley just before serving for a vibrant, fresh finish.
