Roasted Easter lamb with herbs and garlic is a sacred Italian spring tradition. This high protein carnivore mediterranean dish is the centerpiece of family Easter celebrations.
Preheat your oven to 375°F. Pat the leg of lamb dry with paper towels to ensure the exterior will roast properly.
Make small, deep incisions all over the lamb with a paring knife. Fill each slit with a piece of sliced garlic, a rosemary leaf, and a thyme leaf to gently infuse flavor inside.
Rub the lamb generously with salt, black pepper, and olive oil, making sure to massage the seasoning into every surface. Grate the zest from one lemon over the lamb and add a squeeze of lemon juice for brightness.
Place the lamb, fat side up, on a rack set inside a roasting pan. Scatter remaining herbs and smashed garlic cloves around the lamb. Roast uncovered for about 1.5 hours, basting occasionally with pan juices.
After 1.5 hours, check for doneness: an internal temperature of 135°F gives medium-rare. Rest the lamb, tented with foil, for at least 20 minutes before carving. Slice and serve with pan juices spooned over the top.
