Galouti Kebab is a succulent Indian grilled meat preparation with aromatic spices and a melt-in-your-mouth texture. This high protein dish is perfect for carnivore diets and makes an impressive family appetizer.
Finely dice the onion, then squeeze out excess moisture using a kitchen towel to avoid a watery mix.
Combine ground lamb, onion, ginger, garlic, garam masala, ground coriander, chili powder, salt, black pepper, and torn bread slice in a large bowl.
Mix thoroughly by hand to develop a smooth, sticky texture, then refrigerate for 30 minutes to firm up the mixture and let flavors meld.
Shape the mixture into small, flat patties (about 2 inches wide), pressing gently to maintain a tender texture.
Heat 1 tbsp ghee in a nonstick skillet over medium heat; when hot, reduce to medium-low, and cook kebabs in batches, 2–3 minutes per side, brushing with remaining ghee until golden brown and just cooked through.
Let the kebabs rest for 2 minutes off the heat to retain juices before serving.
