Pat the fish dry and brush both sides with olive oil; season lightly with half the salt and pepper.
Preheat your grill to medium-high heat (about 400°F) and oil the grates well to prevent sticking.
Place the fish on the grill and cook for 6–8 minutes per side, turning once, until the flesh is opaque and easily flakes with a fork.
While the fish grills, whisk lemon juice, olive oil, oregano, parsley, garlic, remaining salt and pepper in a small bowl to form the salmoriglio dressing.
