Fish poached in crazy water — tomatoes, garlic, and olive oil in a light broth. This high protein mediterranean dish is fresh, healthy, and perfect for a family dinner on a calorie deficit plan.
Heat 2 tbsp olive oil in a large, wide pan over medium heat. Add sliced garlic cloves and cook gently for 1-2 minutes until just fragrant, not browned.
Add halved cherry tomatoes to the pan. Sauté for 3 minutes, stirring occasionally until some tomatoes begin to soften and release juices.
Pour in 0.5 cup dry white wine and let it simmer for 2 minutes to cook off the alcohol, then add 1 cup water, salt, black pepper, and a pinch of red pepper flakes.
Carefully lay the fish fillets (and optional clams, if using) into the simmering broth in a single layer. Reduce heat to low, cover the pan, and poach the fish gently for 8–10 minutes until just cooked through and opaque.
Uncover, squeeze the juice from 1 lemon over the dish, and sprinkle with chopped fresh parsley. Serve immediately with some broth and tomatoes spooned over each piece of fish.
