Heat a Dutch oven or heavy pot over medium heat and pour in the sesame oil.
Add the sliced ginger and whole garlic cloves, sautéing until fragrant and golden but not burned, about 2-3 minutes.
Increase the heat to medium-high, then add the chicken thighs skin-side down. Sear until the skin is browned, about 4 minutes per side.
