Thick corn masa pockets filled with seasoned refried beans and fried until golden. This vegetarian street food favorite is a hearty, family-friendly snack with authentic Mexican flavor.
In a large mixing bowl, combine masa harina with salt and gradually stir in the warm water until a soft, moist dough forms. Knead for 2–3 minutes until smooth.
Cover the dough with a damp towel and let it rest for 10 minutes to ensure hydration.
In a small skillet over medium heat, heat refried beans, mixing in ground cumin and chili powder. Cook for 3–4 minutes, stirring to blend and warm thoroughly. Remove from heat.
Divide the dough into 6 equal balls. Flatten each ball into a disc about 1/2 inch thick and 4 inches in diameter, keeping edges slightly thicker.
Place about 2 tbsp of the seasoned refried beans in the center of each disc. Fold edges over to enclose, then gently flatten into thick patties, sealing beans inside.
Heat vegetable oil in a large skillet over medium-high. Once oil shimmers, carefully add gorditas in batches. Fry each side for 3–4 minutes until golden and slightly crisp, managing heat to prevent burning.
Transfer fried gorditas to a paper towel-lined plate to drain excess oil. Let cool slightly before serving.
