Heat a wok over medium-high and add 1 tbsp vegetable oil. Once shimmering, fry the diced pork for 4–5 minutes until browned and just cooked through. Remove pork and set aside.
Add another tbsp of vegetable oil to the wok. Toss in carrots, peas, and green onion; stir-fry for 2–3 minutes until vegetables soften, maintaining high heat for quick cooking.
Push the vegetables to the side, crack eggs into the empty space, and scramble just until set. Mix everything together.
Add the cooked rice to the wok; break up clumps and stir well over high heat for 3–4 minutes for even dry, fluffy texture. Return pork to the wok, mix thoroughly.
Drizzle soy sauce, sesame oil, black pepper, and salt over the rice. Stir-fry for 1–2 minutes until everything is hot and fragrant, then portion onto plates.
In a small pan, fry remaining eggs sunny-side up using a bit of oil. Top each plate of fried rice with a fried egg and serve immediately.
