Stuffed Bhindi is a flavorful Indian vegetable preparation that celebrates fresh, seasonal produce with bold spices. This healthy vegetarian dish is perfect for family dinners, DASH diet, and everyday clean eating.
Wash and dry the okra thoroughly. Trim both ends and make a slit lengthwise without cutting through, creating a pocket for stuffing.
In a bowl, mix chickpea flour, chopped onion, cilantro, ground coriander, ground cumin, red chili powder, turmeric, garam masala, salt, and lemon juice. Stir until you have a crumbly stuffing mixture.
Gently stuff each okra with the prepared filling, pressing lightly to ensure the mixture stays inside.
Heat 2 tbsp olive oil in a wide skillet over medium heat. Place the stuffed okra in a single layer, cover, and cook for 7 minutes, flipping halfway to brown both sides and prevent burning.
Reduce heat to low, drizzle remaining olive oil if needed, and cook uncovered for another 7 minutes, turning gently for even tenderness and color. Sprinkle with extra cilantro before serving.
