Sweet soy milk with a touch of sugar is a comforting, vegetarian breakfast beverage. A healthy, fresh family drink rich in plant protein.
Rinse 1 cup dried soybeans and soak them in plenty of water for at least 8 hours or overnight at room temperature for easy blending.
Drain the soaked beans thoroughly, then add them to a blender with 4 cups fresh water. Blend on high until completely smooth and creamy.
Pour the soybean mixture through a fine mesh strainer or nut milk bag into a large saucepan, squeezing well to extract all liquid.
Bring the soy milk to a gentle simmer over medium-low heat, stirring often to prevent scorching. Maintain a bare simmer for about 10 minutes to cook out the raw taste.
Add 2 tbsp granulated sugar and a pinch of salt, stirring until fully dissolved. Taste and adjust sweetness if needed, then serve hot or chilled as desired.
