Rolled flour tortillas stuffed with seasoned chicken and smothered in enchilada sauce and cheese make a hearty family dinner. These protein-packed chicken enchiladas are perfect for feeding a crowd.
Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish lightly with olive oil.
Heat 1 tbsp olive oil in a skillet over medium heat. Sauté chopped yellow onion for about 3 minutes until softened but not browned.
Add shredded cooked chicken to the skillet, along with cumin, chili powder, garlic powder, salt, and black pepper. Stir for 2-3 minutes to coat the chicken evenly and heat through.
Pour 1/2 cup of enchilada sauce on the bottom of the baking dish. Lay out each tortilla, add a generous scoop of chicken mixture and a sprinkle of cheese (reserve half for topping), then roll up tightly and arrange seam-side down.
Pour the remaining enchilada sauce evenly over the rolled tortillas, sprinkle with the rest of the cheese, and cover the dish with foil. Bake for 20 minutes, then remove foil and bake an additional 10 minutes until cheese is bubbling and golden on the edges. Let rest 5 minutes before serving.
