Round, sweet, and utterly irresistible, Rava Ladoo is a traditional Indian confection cherished for generations. This festive treat is a must-have at family celebrations, Diwali, and special occasions.
Heat a heavy-bottomed pan over medium heat. Add ghee and let it melt completely.
Add cashews and raisins to the pan; sauté for 1-2 minutes until cashews are golden and raisins plump. Remove and set aside.
Add semolina (rava) to the same pan with remaining ghee. Roast on low heat, stirring continuously for 6-8 minutes, until it turns aromatic and slightly golden.
Stir in shredded coconut and continue to roast for another 2 minutes.
Lower the heat and add sweetened condensed milk, whole milk, and cardamom powder to the roasted semolina-coconut mixture. Mix thoroughly until well combined and a thick dough forms.
Add back the sautéed cashews and raisins. Mix to distribute evenly, then remove from heat and let the mixture cool until just warm to touch (about 10 minutes).
Grease your hands lightly with ghee and shape the mixture into small, round ladoos while it is still warm. Place on a tray to set completely at room temperature.
