Heat olive oil in a large Dutch oven over medium heat. Add pork ribs and sausage, browning well on all sides for about 8 minutes.
Add chopped onion, carrot, and celery. Stir and cook until the vegetables start to soften, about 5 minutes.
Pour in white wine and increase heat to medium-high; simmer for 2-3 minutes to reduce the wine by half.
Add chopped Savoy cabbage and bay leaves. Season with salt and black pepper, then stir well to coat.
Reduce heat to low, cover with a lid, and stew gently for 90 minutes, stirring every 20 minutes and ensuring the cabbage stays moist but not soggy. When the meat is tender and the stew thickens, remove from heat and serve hot.
