Silky taro congee is a naturally creamy, comforting breakfast with subtle sweetness. A healthy, vegetarian family dish ideal for clean eats and calorie deficit.
Rinse the short-grain rice in several changes of cold water until the water runs mostly clear.
Combine rice, diced taro, and water in a large saucepan or Dutch oven. Bring to a boil over medium-high heat.
Stir well, then reduce the heat to low and partially cover. Simmer very gently, stirring occasionally, for about 35–40 minutes.
As the congee thickens and the taro softens, stir more frequently to prevent sticking, and mash the taro slightly for extra creaminess if desired.
Season with salt and white pepper, stir to mix, and cook 2–3 minutes longer. Serve hot for a silky, warming breakfast.
