Roasted eel with bay leaves and lemon is an Italian festive delicacy. This high protein mediterranean fish dish is a family tradition during holiday celebrations.
Preheat your oven to 400°F. Line a large baking dish with parchment paper to prevent sticking.
Rinse and pat dry the eel fillets. Slice lemons into thin rounds and set aside.
Arrange the eel fillets in the baking dish. Place bay leaves beneath and atop the eel for even aromatic infusion.
Drizzle olive oil over the fillets, sprinkle with salt and black pepper, and layer lemon slices across the eel.
Roast for 35–40 minutes, basting once halfway through with pan juices. The eel is cooked when it flakes easily and is golden on the edges. Rest 5 minutes before serving.
