Stewed lentils with tomatoes and aromatics are a protein-rich vegetarian staple. This mediterranean family side is fresh, high in fiber, and supports a healthy pcos diet or weight loss plan.
Rinse lentils thoroughly under cold running water and drain well.
In a large pot over medium heat, heat olive oil until shimmering. Add diced onion, carrot, and celery; sauté for 5–6 minutes until softened, stirring regularly.
Add minced garlic, bay leaf, and thyme. Cook for 1 minute, stirring constantly to release aromatics.
Stir in lentils, then add crushed tomatoes and water. Increase heat to bring to a boil.
Reduce to a gentle simmer, cover loosely, and cook for 35–40 minutes until lentils are tender but not mushy. Stir occasionally to prevent sticking and adjust water if needed.
Season with salt and black pepper. Remove bay leaf before serving. Rest 5 minutes off heat for flavors to meld.
