Jolada Rotti is a traditional Indian dish with authentic regional flavors and aromatic spicing. This beloved preparation is a family favorite that showcases the incredible diversity of Indian cuisine.
In a large mixing bowl, add jowar flour and salt. Mix well to distribute the salt evenly.
Heat water until just boiling, then gradually pour the hot water into the flour. Stir using a wooden spoon to form a soft, pliable dough. Cover and let rest for 10 minutes.
Knead the dough by hand while still warm, adding a little more water if necessary, until smooth and non-sticky. Divide the dough into 4 equal balls.
Dust a clean surface with jowar flour. Place one dough ball and gently pat it out into a thin disc, about 6–7 inches across. Use your fingers to shape and thin the edges, ensuring the rotti is even.
Heat a cast iron or heavy skillet over medium-high heat. Place the rotti on the skillet, cook for 40 seconds, then flip. Brush a little oil around the edges and cook each side until light brown spots appear and it puffs slightly, pressing with a cloth if needed. Repeat for remaining rottis.
