Break cauliflower florets into small pieces and pulse in a food processor until reaching rice-like granules.
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add cauliflower rice, ground cumin, and chili powder. Sauté for 5–7 minutes, stirring frequently to prevent moisture loss, until just tender.
Season cauliflower rice with salt, black pepper, and lime juice. Remove from heat and let cool slightly for 2–3 minutes.
Slice cherry tomatoes and avocado. Arrange the shredded lettuce in bowls as a base.
Divide cauliflower rice among bowls. Top each with black beans, tomatoes, avocado slices, and cheddar cheese. Drizzle remaining olive oil over bowls and serve immediately.
