Place capon pieces in a large stockpot and cover with at least 10 cups cold water. Bring to a gentle simmer over medium heat, skimming foam frequently for a clear broth.
Add celery, carrots, onion, salt, and peppercorns. Reduce heat to maintain a low simmer (do not boil). Cook uncovered for about 2 hours, occasionally skimming and adjusting heat.
After cooking, carefully strain broth through a fine sieve into a clean pot. Discard vegetables and chicken solids, reserving only the golden broth.
