Traditional moon cakes with rich lotus or red bean filling are an iconic Mid-Autumn Festival treat. A festive family dessert with ornate, symbolic design.
Whisk together golden syrup, peanut oil, molasses, egg, and lukewarm water until smooth, then sift in all-purpose flour and baking soda.
Mix gently to form a soft, non-sticky dough. Knead for 1-2 minutes, wrap with plastic, and rest at room temperature for at least 45 minutes to relax the gluten.
Divide the dough and lotus seed paste (or red bean paste) each into 8 equal portions. Flatten a dough disk and wrap it around the filling, optionally adding half a salted egg yolk in the center for each moon cake.
Press the filled ball into a moon cake mold, ensuring an even distribution and clearly printed pattern. Gently release onto a lined baking sheet.
Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove and let cool for 10 minutes. Brush lightly with egg wash, then bake another 10-15 minutes until golden brown and fragrant. Cool completely before serving for best texture.
