Tamales prepared for First Communion celebrations are a cherished Mexican tradition. This protein-rich, family dish is a fresh, traditional offering for this sacred milestone.
Soak corn husks in warm water for 45–60 minutes until pliable, then drain and pat dry.
In a bowl, whip lard using a mixer until it is light and fluffy for better masa texture.
Gradually add masa harina, baking powder, salt, and half the chicken broth; mix until a soft dough forms, adding broth as needed for a smooth, spreadable consistency.
In a separate bowl, toss shredded chicken with cumin, chili powder, and garlic powder to evenly distribute the seasonings.
Lay corn husks flat, spread 2 tbsp of masa dough on each, then place a generous spoonful of seasoned chicken in the center; fold the sides and bottom of the husks to encase filling.
Arrange tamales upright in a steamer, ensuring space for steam circulation; cover with extra husks or a moist towel and steam over gently simmering water for 75–90 minutes, replenishing water as needed.
Check doneness by unwrapping a tamal: masa should pull away cleanly from the husk when fully cooked. Let tamales rest for 10 minutes before serving.
