Crispy fried salt cod in light batter is a Christmas Eve staple across Italy. This high protein mediterranean fish is a family Vigilia tradition.
Pat the soaked salt cod very dry with paper towels, then cut into 2-inch pieces for even frying.
In a medium bowl, whisk the flour, black pepper, and eggs. Gradually add cold sparkling water to create a smooth, light batter.
Heat olive oil in a wide skillet over medium-high heat (350°F). Test with a drop of batter, which should sizzle immediately.
Dip each piece of cod into the batter and gently lower into the hot oil. Fry without crowding the pan, turning occasionally for 4–5 minutes until crisp and golden on all sides.
Drain fried pieces on a rack or paper towels. Immediately sprinkle with parsley and serve hot with lemon wedges for squeezing.
