Lenten empanadas filled with fish or vegetables are a traditional fasting-day option. This protein-rich, family-friendly dish is a fresh, satisfying meal for the Cuaresma season.
Preheat oven to 375°F and line a baking sheet with parchment paper.
Boil and dice the potato; blanch green peas until tender. Set both aside.
In a skillet over medium heat, sauté onion in olive oil until translucent, about 3 minutes. Add cod fillet, season with salt, pepper, and paprika, then cook gently for 4–6 minutes until flaky.
Combine cod, sautéed onion, potato, green peas, chopped hard-boiled eggs, and parsley in a bowl. Mix thoroughly to distribute flavors and ensure even filling texture.
Place a spoonful of filling onto each empanada dough round. Fold over and seal edges tightly; crimp with a fork for a secure closure.
Arrange empanadas on the prepared baking sheet. Bake for 22–25 minutes or until golden brown, rotating the tray halfway for even browning. Serve warm.
