Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Pat the chicken breasts dry, then brush both sides lightly with olive oil. Season evenly with salt, pepper, and garlic powder.
Arrange the chicken breasts on one side of the baking sheet. On the other side, spread the broccoli florets and toss them with any remaining olive oil and a pinch of salt.
Bake for 18–20 minutes, turning the broccoli halfway through and checking that the chicken reaches an internal temperature of 165°F. Remove the pan as soon as the chicken is just cooked to avoid dryness.
Rest the chicken for 3 minutes before slicing. Plate with roasted broccoli and a generous scoop of hummus on the side. Drizzle with lemon juice just before serving.
