Boil the potatoes in a pot of water over medium heat for 15 minutes, until fork-tender. Drain, let cool slightly, and peel.
Cut the boiled potatoes into bite-sized cubes. Dice the onion and tomato finely for even distribution.
Heat vegetable oil in a large nonstick skillet over medium heat. Add cumin seeds and let them crackle for 30 seconds to release their aroma.
Add diced onions and sauté over medium-high until translucent, about 2 minutes. Stir in turmeric and red chili powder and cook for 30 seconds.
Add the potato cubes and tomatoes to the pan. Mix well to coat evenly with spices. Cook, stirring occasionally, for 6–8 minutes until edges are golden and crispy.
Sprinkle chaat masala and salt over the potatoes. Sauté for 2 more minutes for the flavors to blend. Turn off heat.
Drizzle with lemon juice, toss to combine, and garnish with fresh cilantro before serving.
