Loco Moco stacks a juicy burger patty and fried egg over rice, all smothered in rich brown gravy. This high protein Hawaiian comfort food is a hearty family breakfast or dinner favorite.
Prepare the rice first: Rinse and cook white rice according to package directions so it's fluffy and hot when serving.
Shape the ground beef into four even patties (about 1/4 lb each). Season both sides of the patties with salt and black pepper.
Heat a large skillet over medium-high heat. Add 1 tbsp butter, then sear the patties 3–4 minutes per side until well-browned and just cooked through. Remove patties to a plate and keep warm.
In the same skillet, add remaining butter and chopped onion. Cook over medium heat until translucent and tender, about 4 minutes, scraping up fond.
Sprinkle flour over the onions and cook, stirring constantly, for 1 minute to form a roux. Gradually pour in beef broth, soy sauce, and Worcestershire sauce, whisking smooth. Simmer on medium, stirring, until gravy has thickened (about 4–6 minutes). Return cooked patties to the gravy to warm.
Meanwhile, heat a nonstick skillet over medium heat and fry eggs sunny-side up until whites are set but yolks remain runny (about 2–3 minutes).
To assemble, scoop rice onto each plate, top with a burger patty, ladle generous brown gravy over, and finish each with a fried egg. Serve immediately.
