Corn tortillas filled with squash blossoms and melting Oaxaca cheese, griddled to perfection. This vegetarian delicacy showcases fresh, seasonal Mexican ingredients in a family-friendly format.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add chopped onion and sauté for 2–3 minutes until soft and fragrant.
Add the squash blossoms and fresh epazote leaves to the skillet, season with salt and pepper, and cook gently for 2–3 minutes, stirring occasionally, until wilted. Remove from heat and cool slightly.
Lay out the corn tortillas and evenly divide the Oaxaca cheese on one side of each tortilla, leaving a small border.
Spoon the squash blossom filling over the cheese. Fold each tortilla in half to enclose the filling and press gently.
Brush a large nonstick skillet or griddle with remaining olive oil. Preheat over medium heat and cook quesadillas for 2–3 minutes per side, pressing with a spatula, until golden brown and the cheese has melted.
