Savory radish cake with dried shrimp and Chinese sausage is a dim sum favorite. A family-friendly recipe with fresh, umami-rich flavor and protein.
Peel and grate the daikon radish. In a large skillet over medium heat, cook grated radish with 1 cup water for about 10 minutes until softened. Stir occasionally to prevent sticking.
Thinly slice the Chinese sausage and chop the dried shrimp and scallions. In a separate pan, saute the sausage and shrimp over medium-low heat for 2–3 minutes until fragrant; add scallion and cook for 30 seconds.
In a bowl, combine rice flour with the remaining 0.75 cup water. Stir to make a smooth batter.
Add the cooked sausage-shrimp mixture to the radish. Stir in soy sauce, salt, sugar, white pepper, and sesame oil. Remove from heat and let cool for 5 minutes before proceeding.
Gradually pour the rice flour batter into the radish mix, stirring constantly to avoid lumps. Return pan to low heat and cook, stirring, until the mixture thickens and pulls away from the sides.
Transfer batter to a lightly greased loaf pan or steamer-safe dish. Smooth the surface. Steam over high heat for 50–60 minutes until set and a toothpick comes out clean.
Cool completely at room temperature, then refrigerate for at least 2 hours to firm up. Slice into 3/4 inch pieces. Pan fry both sides over medium heat until golden before serving.
