Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners. This helps with easy release and creates the perfect canvas for your Easter nests.
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, beat together oil, granulated sugar, brown sugar, eggs, and vanilla until well combined, then mix in grated carrots and crushed pineapple (plus nuts if using) until evenly distributed.
Add the dry ingredients to the wet mixture, stirring gently until just incorporated. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake for 20–23 minutes, or until a toothpick inserted comes out clean. Let cupcakes cool completely on a wire rack before decorating. (Easter tip: Carrot cake is a nod to the Easter Bunny and spring harvest!)
For the frosting, beat together softened cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy. Frost each cooled cupcake generously.

Shape small circles on parchment, then place on top of frosted cupcakes. Nestle 2–3 mini candy eggs in each nest for a festive, colorful look.
