Enjoy the crispy perfection of Set Dosa, a classic South Indian fermented crepe with a golden, lacy texture. This vegetarian breakfast favorite is protein-rich and loved by the whole family.
Rinse parboiled rice, urad dal, and poha separately under cold water. Soak rice and poha together in enough water for at least 4 hours, and soak urad dal in a separate bowl for 4 hours.
Drain all the soaking water, then blend the soaked rice, poha, and urad dal together. Add up to 2 cups water gradually to achieve a smooth, pancake-like batter consistency.
Transfer the batter to a large bowl, cover, and let ferment in a warm spot for 8 to 12 hours until bubbly and slightly risen.
Once fermented, gently stir in salt. Heat a non-stick skillet or cast-iron tawa over medium heat, and lightly grease with oil or ghee.
Pour a ladleful of batter onto the pan; do not spread. Let it gently form a thick, small circle. Cover and cook for 1–2 minutes over medium heat until holes appear on top and the edges look golden. Drizzle a few drops of oil or ghee around the sides.
Remove the dosa once cooked through and the base turns a light golden color; no need to flip. Repeat with remaining batter, greasing the pan as needed between dosas.
