Cheeseburger casserole transforms classic burger flavors — ground beef, cheese, pickles, and special sauce — into a family-friendly bake. This protein-packed, fun twist on a cheeseburger is a guaranteed kid favorite.
Preheat your oven to 375°F. Lightly grease a 9x13-inch baking dish with olive oil.
Bring a large pot of salted water to a boil. Cook elbow macaroni just to al dente, about 7 minutes. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add chopped onion and sauté until softened, about 3 minutes, then add ground beef. Cook, breaking up meat, until browned and no longer pink. Drain excess fat.
Stir in garlic powder, salt, black pepper, ketchup, mustard, and mayonnaise. Simmer on medium heat for 2 minutes to combine flavors. Turn off the heat and fold in chopped pickles.
Add cooked macaroni and half of the cheddar cheese to the skillet with the beef mixture. Mix until well blended, ensuring even distribution.
Spread the casserole mixture into the prepared baking dish. Sprinkle remaining cheddar cheese evenly on top.
Bake uncovered for 18–20 minutes, or until the cheese is melted and bubbly. Let rest for 5 minutes before serving.
