Tamales placed on the ofrenda as offerings for departed souls are a sacred tradition. This protein-rich, family dish is a fresh, spiritual centerpiece of Day of the Dead celebrations.
Soak the corn husks in warm water for 30 minutes to soften; set aside.
Poach chicken breast in chicken broth over medium heat until fully cooked, then shred and reserve broth.
In a large bowl, mix corn masa harina, baking powder, salt, and lard; gradually add chicken broth to create a soft, pliable dough.
Spread 2–3 tbsp of masa onto each corn husk, add shredded chicken and pinto beans in the center, and sprinkle cumin over the filling.
Fold corn husks around the filling, ensuring tight seals; steam tamales upright over medium-high heat for 60–70 minutes until masa pulls away easily from the husk.
