Flaky Suzhou-style moon cakes with layers of buttery pastry are an elegant regional specialty. A family dessert with crispy, delicate texture.
Combine 1 cup flour and 6 tbsp unsalted butter to make water dough; add 0.25 tsp salt and 0.5 cup water gradually, kneading until smooth but not sticky.
In a separate bowl, mix 1 cup flour and 4 tbsp lard to make oil dough; blend until it forms a soft, pliable ball.
Divide water dough and oil dough each into 8 equal pieces. Flatten a water dough ball and encase an oil dough ball, sealing carefully.
Roll each ball into a flat oval, then roll up like a jelly roll. Turn 90 degrees and repeat flattening and rolling once more for maximum layering.
Flatten rounds, fill each with 2 tbsp lotus seed paste, wrap and seal. Place seam-side down on a baking sheet.
Brush the tops with egg yolk. Bake at 375°F (190°C) for 25–30 minutes until golden and crispy. Cool before serving.
