Chilled noodles are topped with silky shredded chicken, cucumber, and a sesame or chili dressing. This fresh, high protein dish is perfect for hot weather family meals and supports a calorie deficit plan.
Place chicken breast in a saucepan, cover with cold water, and add 1/2 tsp salt. Bring to a gentle simmer over medium-low heat and poach for 10–15 minutes until just cooked through. Transfer to a plate and let cool before shredding by hand.
Cook dried wheat noodles according to package instructions until al dente (usually 5–7 minutes), stirring occasionally to prevent sticking. Drain, rinse under cold running water to stop the cooking, and toss lightly with a little sesame oil to prevent clumping.
Slice the cucumber into thin julienne strips and cut scallions into thin slivers.
In a bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, chili oil, and sesame seeds until well combined.
To serve, portion noodles into bowls, arrange cucumber and scallions on top, add a generous amount of shredded chicken, and drizzle with the prepared dressing. Toss just before eating for even coating. Serve immediately as a chilled dish.
