Morning lamb broth served steaming hot is a traditional Mexican breakfast soup. This high protein, healthy, fresh broth is a warming, family-friendly way to begin the day.
Trim excess fat from the lamb shanks. Rinse under cold water to remove impurities.
In a large stockpot, combine lamb shanks and water. Bring to a gentle boil over medium-high heat, skimming foam as it rises.
Once boiling, reduce to a low simmer and add carrots, chayote, onion, celery, bay leaves, peppercorns, garlic, and salt. Cover and simmer gently for about 2 hours.
Remove vegetables after 1 hour of simmering to avoid overcooking; set them aside for garnish. Continue cooking the lamb for an additional hour.
After lamb is tender, skim excess fat carefully from the surface. Taste broth for seasoning, adjust salt as needed, and stir in fresh cilantro just before serving.
