Pat the chicken thighs dry, then season with 1 teaspoon salt, black pepper, and ground cumin for even flavor absorption.
Heat olive oil in a large, heavy-bottomed pot over medium-high heat; brown the chicken pieces on all sides, working in batches to avoid overcrowding.
Lower the heat to medium. In the same pot, add onions, carrots, and bell pepper. Sauté until the onions are soft and translucent, about 5 minutes.
