Crispy Southwest egg rolls filled with chicken, beans, and corn are a high protein, family-favorite party snack. These bold, crunchy bites deliver Tex-Mex flavors in every bite.
In a large bowl, mix cooked chicken breast, black beans, corn, cheddar cheese, red bell pepper, and green onion until evenly combined.
Add chili powder, cumin, garlic powder, salt, and black pepper. Stir thoroughly to distribute seasoning throughout the filling.
Lay out egg roll wrappers on a clean surface. Spoon about 2–3 tbsp of filling onto the lower third of each wrapper and fold tightly, sealing edges with a dab of water.
Heat vegetable oil in a deep skillet to 350°F. Fry egg rolls in batches for about 2–3 minutes per side, turning once for even browning.
Transfer egg rolls to a wire rack or paper towel to drain. Let cool slightly for optimal crunch, and serve warm with dipping sauce if desired.
