This pretzel bun burger transformed my fast food experience! The soft pretzel bun has that perfect chewy texture with coarse salt crystals that complement the smoky bacon and beef patty beautifully.
Cook the bacon: Place bacon slices in a cold skillet, turn heat to medium, and fry until crispy, 8–10 minutes. Drain on paper towels.
Form the beef: Divide ground beef into two equal portions. Shape each portion into a square patty, about 1/2-inch thick, using your hands or a flat spatula. This replicates Wendy's signature square shape for even edge char.
Cook the patties: Season both sides with sea salt and black pepper. Preheat a cast iron skillet or grill pan over high heat until just smoking. Sear patties without moving them for 3 minutes, then flip and sear 2 minutes more until a deep brown crust forms.
Melt the cheese: Place a slice of cheddar on each patty in the last minute of cooking. Cover pan briefly to melt.
Toast the pretzel buns: While patties cook, spread the inside of each pretzel bun with butter. Toast in a skillet, cut-side down, until golden and lightly crisp—about 2 minutes.
Make S'Awesome sauce: In a small bowl, mix mayonnaise, ketchup, BBQ sauce, and garlic powder until thoroughly combined.
Assemble: Spread sauce generously on the bottom bun. Stack the first cheese-topped patty, 3 slices bacon, second patty, and remaining bacon. Top with the second slice of cheese and the top bun. Sprinkle extra coarse sea salt on bun if desired.
