Heat olive oil in a heavy pot over medium heat. Add the chicken thighs and brown for 3-4 minutes per side. Remove and set aside.
Add chopped onion to the pot; sauté over medium heat for 5 minutes until softened, scraping any browned bits.
Add poblano peppers, serrano chiles, and garlic; cook for another 3 minutes, stirring frequently.
Return chicken to the pot. Add chicken broth, yerba santa leaves (torn or chopped), salt, and black pepper. Stir well.
Bring to a gentle simmer, reduce heat to low, cover, and braise for 40-45 minutes until chicken is tender and the sauce is aromatic. Serve hot with extra sauce spooned over the chicken.
