These plant-based sliders completely fooled my carnivore friends at our weekend BBQ! The upgraded Impossible patty has this incredible juicy, meaty texture that sears beautifully, and those signature steamed onions still melt perfectly into every bite. Surprisingly satisfying and lighter than the original – you can easily crush three without feeling weighed down.
1. Divide the Impossible Burger meat into 6 equal portions (2 oz each) and shape into thin, square patties. Use a drinking straw or chopstick to poke 5 holes in each patty for authentic White Castle steam-grilling—this ensures even cooking and that signature slider texture.
2. Spread the finely diced yellow onions in an even layer across a large skillet or griddle, then add 1/4 cup water to create steam. Bring to medium heat; the onions will begin to soften and steam in 3–4 minutes.
3. Place the Impossible patties directly on top of the steamed onions, hole side down. Steam-cook for 3–4 minutes, then flip and cook another 2 minutes. White Castle tip: Cooking directly atop the onions infuses the patties with their signature flavor and juiciness.
