Chicken sautéed with sweet peppers in a vibrant tomato sauce from central Italy. This high protein chicken dish is a fresh, colorful mediterranean family dinner rich in vitamins.
Pat chicken thighs dry and cut into large chunks. Season with half the salt and black pepper.
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Sear the chicken pieces in batches, until golden on all sides but not cooked through (about 6 minutes). Set aside.
Add remaining olive oil to the skillet. Sauté sliced onions and garlic over medium heat for 2-3 minutes until fragrant, being careful not to brown the garlic.
Add sliced red and yellow bell peppers. Increase heat to medium-high and stir-fry until just softened and glossy, about 5 minutes.
Return chicken to the skillet. Pour in crushed tomatoes, remaining salt, black pepper, and oregano. Stir well, bring to a simmer, then cover and cook over low heat for 18–20 minutes until chicken is cooked through and peppers are tender but not mushy.
Uncover and simmer for 3–5 minutes to reduce sauce if needed. Adjust salt to taste and serve topped with fresh basil.
