Creamy fava bean soup simmered with onion, garlic, and Mexican herbs. This vegetarian, protein-rich soup is a healthy family comfort food with earthy, satisfying flavors.
1. Rinse and soak the dried fava beans overnight, then drain and set aside.
2. In a large pot over medium heat, add olive oil. Sauté chopped onion, garlic, carrot, and celery for 5–6 minutes until vegetables soften and onions turn translucent.
3. Add the soaked fava beans to the pot, stirring to coat with the sautéed vegetables. Cook for 2 minutes.
4. Pour in vegetable broth, add bay leaf and dried oregano. Increase heat to high and bring to a boil, then reduce heat to low and simmer uncovered for 40–45 minutes, skimming foam as needed and stirring occasionally.
5. Remove bay leaf. Add salt, black pepper, and fresh cilantro. Use an immersion blender or blend partially to create a creamy but still textured soup. Taste and adjust seasoning as needed, then serve hot.
