Fluffy fried dough balls served sweet or savory are Puglia's festive street food. These light mediterranean treats are a family tradition during Christmas celebrations.
In a large bowl, combine all-purpose flour and salt. Create a well in the center and sprinkle active dry yeast on one side.
Slowly pour in lukewarm water, mixing with a wooden spoon until a sticky dough forms. Drizzle in olive oil and mix until silky.
Cover the bowl with a damp cloth and let the dough rise in a warm spot for 1–2 hours, or until doubled in size with visible bubbles.
Heat vegetable oil in a deep pot to 350°F (175°C), monitoring oil temperature for consistent frying.
Using oiled hands or two spoons, drop golf-ball-sized portions of dough carefully into the hot oil. Fry in batches, turning for even browning, until puffed and deep golden on all sides (3–4 minutes per batch).
Remove pettole with a slotted spoon to a paper towel-lined tray. Serve warm as-is, or roll in sugar/honey for sweet, or season with sea salt/herbs for savory.
