Trim any excess fat from the beef brisket and pat dry with paper towels for even browning.
Season brisket with salt, pepper, and minced garlic. Heat 2 tbsp vegetable oil in a heavy skillet over medium-high heat. Sear brisket on all sides until deep golden brown, about 3–4 minutes per side.
Transfer brisket to a slow cooker. Add 0.5 cup chopped onion, remaining oil, and 0.25 cup water. Set slow cooker to low and cook for 6–7 hours until beef is fork-tender.
Remove brisket from cooker and let rest for 10 minutes. Slice thinly or shred using two forks.
In a skillet over high heat, quickly crisp the beef with reserved juices until edges are caramelized, 2–3 minutes. Fill warm corn tortillas with suadero, sprinkle with cilantro, onion, and squeeze fresh lime juice over each taco.
