Mooli Paratha is a flaky, stuffed Indian flatbread that's pan-fried to golden perfection with butter or ghee. This hearty vegetarian bread is a satisfying family breakfast or dinner accompaniment.
In a large bowl, combine the whole wheat flour and a pinch of salt. Add yogurt and enough water to knead into a soft, smooth dough. Cover and let rest for 20 minutes.
Meanwhile, mix the grated and squeezed mooli with salt, ajwain, red chili powder, chopped cilantro, and chopped green chili. Let stand for 5 minutes, then squeeze again to remove excess moisture.
Divide dough and mooli mixture into equal portions. Flatten a dough ball, place a generous scoop of the mooli filling in the center, and gather the edges to seal completely.
Gently roll each stuffed ball into a 6-inch circle, dusting with flour to prevent sticking. Press lightly to avoid tearing the dough and ensure even filling distribution.
Heat a skillet over medium-high and cook each paratha for 2 minutes on one side, flip when brown spots appear, brush with butter or ghee, and cook the other side until golden and crisp. Repeat for all parathas.
