Preheat the oven to 400°F and bake the corn tortillas for 6–8 minutes on each side until perfectly golden and crisp.
In a large pot, simmer the beef brisket, covered with water and a generous pinch of salt, over medium-low heat for 50–60 minutes until fork-tender. Let cool slightly, then shred with forks.
Slice the radishes thinly, shred the romaine lettuce, dice tomatoes, finely chop the onion, cilantro, and jalapeño. Slice the avocado just before serving.
In a bowl, make the vinaigrette: whisk together lime juice, olive oil, red wine vinegar, salt, pepper, and oregano until fully emulsified.
Toss the shredded beef with radishes, lettuce, tomato, onion, cilantro, and jalapeño. Drizzle with vinaigrette and combine well.
Top each crisp tortilla with a mound of the beef salad mixture. Garnish with avocado slices and serve immediately.
